Green Chili, Mexican Style

This came from a Weight Watchers cookbook. Very tasty, with a nice "kick" to it. I'm sure it could easily be done on the stovetop, just cook until the beef is fall-apart tender. Serve with sour cream and a nice crusty bread (or flour tortillas). A 1 cup serving is 3 WW points. -- posted by flower7 more...

Chili Minestrone Soup ( Crockpot )

This is somewhere between a chili and a minestrone... It is spicy, so I warn you to adjust the seasonings and/or the tomatoes and beans used accordingly if you don't want that! I did not put any pasta in this but you can if you wish at the end of cooking. This is good with homemade croutons and a sprinkling of cheese on top, or with a grilled cheese sandwich, or by itself. -- posted by kburie more...

Turkey, Beef and Black Bean Chili

From The Parker Ranch Grill in Kamuela, Hawaii. I'm told it's still too mild even after adding habenero and jalapeno peppers to it. -- posted by Kymmarie more...

Easy Mexican Dip

Easy to put together on the spur of the moment with ingredients I normally have at home. There's several Mexican dip recipes here, but I didn't see this one. From Kraft. -- posted by kburie more...

Jicama Salad

This is another recipe from The Mansion on Turtle Creek in Dallas. It is a recipe created by chef Dean Fearing and is Southwest cuisine at it's best. The recipe calls for cold-pressed peanut oil. I make it with canola because it's easier to find and it's healthier. -- posted by Julie in TX more...
